
When I first heard someone speak of chimichurri, I thought it had to be some kind of exotic animal or perhaps a reference to that song from Mary Poppins. But as it turns out, chimichurri is actually a sauce similar to pesto. It is usually vinegar and/or oil based with plenty of fresh, finely chopped herbs and garlic.

Rapini alla Paesana
Rapini , also known as broccoli raab, is a bitter green primarily used in Italian and Portuguese cooking. Rapini is low in calorie content but rich in vitamin A, B-6, C, Calcium, Magnesium and Fibre. If bitter doesn’t appeal to you, there are many ways to prepare Rapini to cut its bitterness. Once I tired rapini that had been prepared along with other fragrant ingredients, I became hooked, and it is now one of my favourite vegetables.

Sweet Peas with Crisp Prosciutto, Fresh Mint & Feta
This side dish is simple to make and tastes great served hot or cold. Even the pickiest of eaters will be saying, “hmm…that’s not so bad!” I would know, because I live with the king of picky eaters when it comes to vegetables…and fruit…and pasta…and desserts! However, I do love a challenge! The key here is to not overcook the peas. You want them to be crisp in texture.

Breakfast Pizza (Dairy & Gluten-Free!)

I have always felt that pizza should fall under the category of acceptable breakfast foods. Call it breakfast pizza, and little justification is required! But who made the rules surrounding what foods or culinary dishes are assigned or appropriate to specific meal times in the westernized part of the world? Furthermore, who decided when we ‘should’ eat? After doing a bit of digging, I found that these rules and eating patterns have been forever evolving as society itself changes.
